As of August 2020, confirmed COVID-19 cases have reached more than 18,000,000 globally with 700,000 deaths and counting, according to the World Health Organization (WHO). An unknown respiratory disease plagued the province of Wuhan, China sometime in December of 2019; it began rapidly killing thousands of people in days and overwhelming hospitals and medical professionals. The novel coronavirus or COVID-19 is believed to come from “horseshoe bats” that were sold at the wet markets in China as “rare delicacies.” Some researchers say that the virus originated from a pangolin; others say it came from a research laboratory that is not too far from the market. Regardless of how this virus came to be, this mutated pathogen has managed to infect humans with the devastating effect of all countries declaring national emergencies. In Gabriele Volpato’s article, in the Journal of Ethnobiology and Ethnomedicine, “Baby Pangolins on My Plate: Possible Lessons to Learn from the COVID-19 Pandemic,” the claim is made that “foods, food systems, and food cultures play a key role in the emergence of zoonotic diseases” (2). While most people, including our global leaders and big companies, believe that vaccines and advanced technologies in tracing emerging infectious diseases, can save us against pandemics, it is not enough to stop future outbreaks because of our connection to wildlife, human consumption, and lack of information.
