Bile: What is bile? Bile is an emulsifier; it breaks down the large fat globules into smaller droplets. Bile is made in the liver and stored in the gallbladder. Bile is released into the first section of the small intestine, the duodenum to start emulsification. The emulsification process makes lipids more accessible to the digestive enzymes.
Chylomicrons: Explain the structure of a chylomicron. Chylomicrons are large structures with a core of triglycerides and cholesterol and an outer membrane made up of phospholipids, interspersed with proteins (called apolipoproteins) and cholesterol. Chylomicrons are the largest and least dense lipoprotein with a diameter of about 75nm-1200nm and a density of 0.95g/dL. Chylomicrons are one type of lipoprotein which are essentially transport vehicles for lipids in blood and lymph. Chylomicrons transport lipids from the small intestine to deliver triglycerides to the body’s cells.
Cholesterol: Describe the effects of different foods on cholesterol absorption. Highly processed foods such as margarines, cookies, pastries, fried foods, and snack foods are sources of saturated fat that can elevate cholesterol levels. Fatty fish like salmon, tuna, and halibut are heart=healthy due to their high levels of omega-3 fatty acids, which reduce inflammation and lower cholesterol levels. Foods rich in soluble fiber reduces cholesterol absorption in the bloodstream.
What is “good” cholesterol? What is “bad” cholesterol? Good cholesterol is referred to as low-density lipoproteins (LDL) and bad cholesterol is referred to as high-density lipoproteins (HDL). The job of the LDL is to deliver cholesterol to the body’s cells. The job of the HDL is to pick up cholesterol from the body’s cells and return it to the liver for disposal.
